The Best Protein Pancakes

One of the best things for me that has come out of this year of the pandemic is a focus on health and fitness. This has included finding some amazing YouTube content creators that share recipes, post workout programs, and help me learn something new in this field.  

This recipe has been one of my favorites and is a go-to of mine almost every weekend.  I found this recipe while following Linda Sun on Instagram (@lindasunyt) and YouTube.  Linda's vlogs include simple, fast recipes she has tried, a review of fitness programs on YouTube, and a look into how she works through her own wellness journey.  Check her out if you get a chance.  The recipes and her families workouts are totally worth it! 


Ingredients:

1/2 - 1 banana

1/4 cup oats (I use the Gluten Free ones from Bob's Red Mill) 

1 tsp baking powder

1 scoop protein powder (I use Tone It Up Protein Powder in Vanilla)

1/4 cup almond milk

1 whole egg

1 - 2 tblspn of PB2 powder

1 tsp cinnamon


Instructions:

Combine all ingredients in a blender, pulsing until smooth. Add more almond milk if the batter is too thick. 

Spray a frying pan with coconut oil or other preferred cooking spray.

Once the pan is hot, pour batter into pan.

Wait for batter to bubble to know when it is time to flip. 

Flip the pancakes and cook another few minutes. 

Stack on plate, top with fruit, coconut shreds, nuts, syrup, or whatever your heart desires! 

These also refrigerate very well and you can heat them up in a toaster.
